This healthy cabbage soup recipe gets plenty of flavor from a bit of hot sauce and some fresh herbs. Be sure to use fresh cilantro, as this cabbage soup isn’t the same without it.
Ingredients:
- 1 pound cabbage, chopped
- 2 onions, chopped
- 2 cloves garlic, minced
- 2 cups vegetable broth
- dash salt and pepper to taste
- dash Tabasco or hot sauce, to taste
- fresh chopped cilantro
Preparation:
Combine all ingredients except cilantro in a large saucepan. Allow to simmer for at least 20 minutes.
Transfer half of the soup to a blender or food processor and process until smooth.
Recombine the soup and reheat as needed. Stir in cilantro and add additional salt, pepper and hot sauce, to taste.
